Öko-Caribe is a cacao processor in the town of Pimentel in the Duarte province in the north central part of the Dominican Republic. The Duarte province is the largest cacao growing region in the country and Öko-Caribe maintains close relationships with over 150 small farmers within the region providing training and organic certification support.
The farmers harvest the cacao pods open them, extract the pulp-covered beans and bring them to Öko-Caribe. The beans are fermented in wooden boxes for six days, then placed in solar driers to dry for seven to ten days.
